Super-easy four-ingredient recipe for lemon cookies

These cookies are so easy to make that practically anyone could make them and they would still be good. My grandma likes to say she can’t boil water right, but she can make these cookies. She doesn’t make them often, but when she does, it always happens to be the perfect time for us to come over. My grandma received the recipe from one of her tennis friends and my brother and I make them all the time. It’s really fun and easy.

 

Ingredients

  • 1 box Lemon Cake Mix
  • 2 cups Cool Whip
  • 1 egg, beaten
  • 1/2 cup powdered sugar (for rolling)

Instructions

  1. Preheat oven to 350°.
  2. In a medium bowl, combine the dry cake mix, beaten egg, and cool whip. The mixture will be very stiff.
  3. Drop by teaspoonfuls into a bowl of powdered sugar and roll to coat.
  4. Place on cookie sheet. Bake for 10- 12 minutes or until slightly set and tops are cracked.
